West African Kickin' Chicken Suya Skewers
with Tangy Tomato-Peanut Drizzle
Serves: 4 | Prep Time: 20 min + 1 hr marinate | Cook Time: 15–20 min
Ingredients:
2 lbs boneless chicken thighs, cut into chunks
3 tbsp Rollicking Buckaroo Kickin’ Chicken Seasoning Blend
2 tbsp ground roasted peanuts (or peanut powder)
2 tbsp vegetable oil
Juice of 1 lemon
2 tbsp grated onion
1 tsp minced garlic
1 tsp smoked paprika
Skewers (soaked if wooden)
For the Tomato-Peanut Drizzle:
1/4 cup crushed tomatoes
2 tbsp smooth peanut butter
1 tbsp water
Pinch of cayenne (optional)
Salt to taste
Instructions:
Marinate Chicken:
In a bowl, combine seasoning blend, peanuts, oil, lemon juice, onion, garlic, and paprika. Toss chicken in marinade, coat thoroughly, and let sit at least 1 hour.
Make the Sauce:
Mix crushed tomatoes, peanut butter, water, and a touch of salt. Warm gently until smooth and drizzleable.
Grill or Roast:
Thread chicken onto skewers. Grill over medium-high heat or roast at 400°F for 15–20 minutes, turning occasionally until golden, juicy, and lightly charred.
Serve:
Plate with grilled onions and bell peppers, or alongside jollof rice or flatbread. Drizzle with tomato-peanut sauce and scatter chopped fresh herbs or green onions for brightness.
