USA Red, White & BBQ Chicken Skewers
with Rollicking Buckaroo Pepper Jam Glaze
Ingredients:
1½ lbs boneless chicken breast or thighs, cubed
1 red bell pepper, cut into chunks
1 small red onion, quartered
1 zucchini, thick-sliced
½ cup Rollicking Buckaroo Pepper Jam (Medium or Hot)
2 tbsp olive oil
Salt and pepper to taste
Fresh parsley or chopped scallions for garnish
Skewers (wooden or metal)
Directions:
Preheat grill to medium-high heat.
In a bowl, toss chicken with olive oil, salt, and pepper.
Thread chicken, red bell pepper, onion, and zucchini onto skewers in red-white-green pattern to mimic flag colors.
Grill skewers for 8–10 minutes, turning occasionally.
During last few minutes of grilling, baste generously with warmed Rollicking Buckaroo Pepper Jam to glaze.
Serve hot, garnished with fresh herbs, alongside classic BBQ sides.
Tip:
For a sweet, spicy, and patriotic pop, serve over a bed of blue corn chips or red cabbage slaw to play up red, white & blue colors!
