Sweet with a Kick: Spicy Raspberry Pepper Jam Muffins

Makes: 12 muffins

Ingredients:

  • 2 cups all-purpose flour
  • ¾ cup sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup butter, melted
  • ½ cup milk
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup Rollicking Buckaroo Medium Pepper Jam
  • ½ cup fresh raspberries (optional)
  • ¼ tsp cinnamon
  • ¼ cup chopped pecans (optional)

Instructions:

  1. Preheat oven to 375°F. Line a muffin tin with paper liners.
  2. In a bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, mix melted butter, milk, eggs, and vanilla. Gradually combine with dry ingredients until just mixed.
  4. Gently fold in Rollicking Buckaroo Pepper Jam and raspberries, creating swirls in the batter.
  5. Divide batter evenly among muffin cups and top with chopped pecans.
  6. Bake for 18-22 minutes until golden brown and a toothpick inserted comes out clean.
  7. Cool & enjoy warm or at room temp, with extra pepper jam drizzled on top!
