Sweet with a Kick: Spicy Raspberry Pepper Jam Muffins
Makes: 12 muffins
Ingredients:
- 2 cups all-purpose flour
- ¾ cup sugar
- 2 tsp baking powder
- ½ tsp salt
- ½ cup butter, melted
- ½ cup milk
- 2 eggs
- 1 tsp vanilla extract
- ½ cup Rollicking Buckaroo Medium Pepper Jam
- ½ cup fresh raspberries (optional)
- ¼ tsp cinnamon
- ¼ cup chopped pecans (optional)
Instructions:
- Preheat oven to 375°F. Line a muffin tin with paper liners.
- In a bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, mix melted butter, milk, eggs, and vanilla. Gradually combine with dry ingredients until just mixed.
- Gently fold in Rollicking Buckaroo Pepper Jam and raspberries, creating swirls in the batter.
- Divide batter evenly among muffin cups and top with chopped pecans.
- Bake for 18-22 minutes until golden brown and a toothpick inserted comes out clean.
- Cool & enjoy warm or at room temp, with extra pepper jam drizzled on top!
