Sweet & Spicy Rollicking Buckaroo Chicken Skewers

Ingredients:
2 lbs boneless, skinless chicken thighs, cut into 1.5-inch cubes
1/2 cup Rollicking Buckaroo Pepper Jam (medium or preferred heat)
2 tbsp soy sauce
1 tbsp olive oil
2 tsp smoked paprika
1 tsp garlic powder
1/2 tsp black pepper
1 red bell pepper, cut into chunks
1 yellow bell pepper, cut into chunks
1 small red onion, cut into chunks
Fresh cilantro, for garnish
Wooden skewers (soaked in water 30 min before grilling)
Instructions:
Marinate the chicken: In a large bowl, whisk together Rollicking Buckaroo Pepper Jam, soy sauce, olive oil, smoked paprika, garlic powder, and black pepper. Add chicken cubes and toss to coat. Marinate for at least 30 minutes (or up to 4 hours).
Assemble skewers: Alternate threading chicken, bell peppers, and onion onto the skewers.
Cook: Grill over medium-high heat for 12–15 minutes, turning occasionally, until chicken is cooked through and slightly charred.
Serve: Arrange on a colorful platter, sprinkle with fresh cilantro, and add lime wedges on the side for a fresh pop.
Tips for Potluck:
Keep extra Rollicking Buckaroo Pepper Jam on the side for dipping.
Add a mix of colorful vegetables like zucchini or cherry tomatoes for extra visual appeal.
