Sweet & Spicy Roasted Cauliflower Steaks with Quinoa & Avocado Lime Sauce
Ingredients
For the Cauliflower Steaks:
- 1 large head of cauliflower, sliced into ¾-inch thick steaks
- 2 tbsp olive oil
- 1 tbsp Rollicking Buckaroo Kickin’ Chicken Seasoning
- 2 tbsp Rollicking Buckaroo Pepper Jam (Medium or Hot, depending on your spice preference)
For the Quinoa:
- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- ½ tsp salt
- ½ tsp cumin
For the Avocado Lime Sauce:
- 1 ripe avocado
- Juice of 1 lime
- 1 clove garlic, minced
- ¼ cup cilantro, chopped
- ¼ cup water (adjust for consistency)
- Salt & pepper to taste
Instructions

Prepare the Cauliflower Steaks
- Preheat oven to 425°F (220°C).
- Brush cauliflower steaks with olive oil and season with Kickin’ Chicken Seasoning.
- Roast on a lined baking sheet for 20 minutes, flipping halfway.
- During the last 5 minutes, brush with Rollicking Buckaroo Pepper Jam and roast until caramelized.

Cook the Quinoa
- In a saucepan, bring vegetable broth to a boil.
- Add quinoa, salt, and cumin, then cover and simmer for 15 minutes.
- Fluff with a fork and set aside.

Make the Avocado Lime Sauce
- Blend all sauce ingredients until smooth. Adjust water for desired consistency.

Assemble & Serve
- Place a bed of quinoa on a plate, top with a roasted cauliflower steak, and drizzle with avocado lime sauce.
- Garnish with extra cilantro and a squeeze of lime.
