Sweet & Spicy Roasted Cauliflower Steaks with Quinoa & Avocado Lime Sauce

Ingredients

For the Cauliflower Steaks:

  • 1 large head of cauliflower, sliced into ¾-inch thick steaks
  • 2 tbsp olive oil
  • 1 tbsp Rollicking Buckaroo Kickin’ Chicken Seasoning
  • 2 tbsp Rollicking Buckaroo Pepper Jam (Medium or Hot, depending on your spice preference)

For the Quinoa:

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • ½ tsp salt
  • ½ tsp cumin

For the Avocado Lime Sauce:

  • 1 ripe avocado
  • Juice of 1 lime
  • 1 clove garlic, minced
  • ¼ cup cilantro, chopped
  • ¼ cup water (adjust for consistency)
  • Salt & pepper to taste

Instructions

  1. Prepare the Cauliflower Steaks

    • Preheat oven to 425°F (220°C).
    • Brush cauliflower steaks with olive oil and season with Kickin’ Chicken Seasoning.
    • Roast on a lined baking sheet for 20 minutes, flipping halfway.
    • During the last 5 minutes, brush with Rollicking Buckaroo Pepper Jam and roast until caramelized.
  2. Cook the Quinoa

    • In a saucepan, bring vegetable broth to a boil.
    • Add quinoa, salt, and cumin, then cover and simmer for 15 minutes.
    • Fluff with a fork and set aside.
  3. Make the Avocado Lime Sauce

    • Blend all sauce ingredients until smooth. Adjust water for desired consistency.
  4. Assemble & Serve

    • Place a bed of quinoa on a plate, top with a roasted cauliflower steak, and drizzle with avocado lime sauce.
    • Garnish with extra cilantro and a squeeze of lime.
