Sweet & Spicy Cheesecake with Rollicking Buckaroo Pepper Jam
Serves: 8
Ingredients:
For the Crust:
- 1 ½ cups graham cracker crumbs
- ¼ cup sugar
- ½ tsp cinnamon
- 6 tbsp melted butter
For the Cheesecake Filling:
- 2 (8 oz.) packages cream cheese, softened
- ½ cup sugar
- 2 eggs
- 1 tsp vanilla extract
- ½ cup sour cream
For the Topping:
- ½ cup Rollicking Buckaroo Medium Pepper Jam
- 1 tbsp water
- Fresh berries (optional)
Instructions:
- Preheat oven to 325°F. Grease a 9-inch springform pan.
- Make the crust: Mix graham cracker crumbs, sugar, cinnamon, and melted butter. Press firmly into the pan. Bake for 8 minutes, then cool.
- Prepare the filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
- Pour into crust and bake for 35-40 minutes, until the center is just set. Cool completely.
- Heat the pepper jam with 1 tbsp of water, stirring until smooth. Pour over the cooled cheesecake.
- Garnish with fresh berries, slice, and serve!
