Sweet & Spicy BBQ Chicken Sliders with Pineapple Slaw

Ingredients:
For the Chicken:
2 lbs boneless, skinless chicken thighs
½ cup Rollicking Buckaroo Pepper Jam (Medium or Hot)
2 tbsp soy sauce
1 tbsp olive oil
1 tsp garlic powder
1 tsp smoked paprika
Salt & pepper to taste
For the Pineapple Slaw:
2 cups shredded cabbage (green and purple mix)
1 cup fresh pineapple, finely chopped
¼ cup shredded carrots
¼ cup chopped cilantro
¼ cup mayonnaise
1 tbsp apple cider vinegar
1 tsp honey
Salt & pepper to taste
For Serving:
12 Hawaiian slider buns
1 tbsp butter, melted
Instructions:
Marinate the Chicken: In a bowl, mix Rollicking Buckaroo Pepper Jam, soy sauce, olive oil, garlic powder, smoked paprika, salt, and pepper. Coat chicken thighs and let marinate for at least 30 minutes (or overnight for extra flavor).
Grill the Chicken: Heat a grill or pan over medium-high heat. Cook chicken for about 6-7 minutes per side, until fully cooked and slightly caramelized. Let rest for 5 minutes, then slice.
Make the Pineapple Slaw: In a large bowl, combine shredded cabbage, pineapple, carrots, and cilantro. In a small bowl, mix mayo, apple cider vinegar, honey, salt, and pepper. Pour dressing over the slaw and toss to coat.
Toast the Buns: Brush slider buns with melted butter and lightly toast on the grill or in a pan.
Assemble the Sliders: Place a slice of grilled chicken on each bun, top with a spoonful of pineapple slaw, and close with the top bun.
