🥗 Summertime Smoky Citrus Pasta Salad

🌞 Ingredients:

12 oz tri-color rotini pasta (cooked al dente, rinsed cold)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, thinly sliced

1/4 cup red onion, thinly sliced (optional)

1/4 cup fresh parsley or basil, chopped

1/3 cup olive oil

2 tbsp red wine vinegar or fresh lemon juice

1 ½ tsp Rollicking Buckaroo Smoky Citrus Salt (more to taste)

1/2 tsp freshly cracked black pepper

Orange wedges for garnish (optional)

🧑🍳 Instructions:

Cook the Pasta
Boil rotini until just tender. Drain, rinse under cold water, and toss with a drizzle of olive oil to prevent sticking.

Mix the Veggies
In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, and herbs.

Make the Dressing
Whisk together olive oil, vinegar (or lemon juice), Smoky Citrus Salt, and black pepper until well combined.
