
Spicy-Sweet Bacon-Wrapped Asparagus with Pepper Jam Glaze

Ingredients:
1 bunch fresh asparagus (about 20 spears)
10 slices of bacon, cut in half
¼ cup Rollicking Buckaroo Pepper Jam (Medium or Hot)
1 tbsp balsamic vinegar
1 tbsp olive oil
½ tsp garlic powder
½ tsp black pepper
Toothpicks (optional)
Instructions:
Preheat the oven to 400°F (or heat up the grill).
Trim asparagus by snapping off the woody ends. Toss with olive oil, garlic powder, and black pepper.
Wrap asparagus: Take a half-slice of bacon and wrap it tightly around each asparagus spear. Secure with a toothpick if needed.
Make the glaze: In a small bowl, mix Rollicking Buckaroo Pepper Jam with balsamic vinegar.
Bake or Grill:
Oven: Place wrapped asparagus on a lined baking sheet and bake for 12-15 minutes, flipping once.
Grill: Cook over medium heat for about 5-7 minutes per side until bacon is crispy.
Glaze & Serve: Brush the asparagus with the pepper jam glaze in the last 2 minutes of cooking. Let it caramelize slightly, then serve hot!
