Spicy Pepper Jam Coleslaw


4 cups shredded cabbage (from 1 head cabbage)

1 cup thinly sliced red bell pepper

1 cup thinly sliced yellow bell pepper

1/2 cup thinly sliced red onion

1/2 cup chopped fresh cilantro

1/4 cup Rollicking Buckaroo Pepper Jam-Medium

3 tablespoons olive oil

2 tablespoons fresh lime juice (from 1 lime)

1 1/2 teaspoons kosher salt

1/4 teaspoon cayenne pepper

1/4 teaspoon black pepper


Toss together cabbage, bell peppers, onion, and cilantro in a bowl.

Whisk together pepper jam, oil, lime juice, salt, cayenne, and black pepper in a small bowl.

Add to cabbage mixture; toss until well coated.
