Ingredients
- 8 lamb rib chops
- 2 tbsp Rollicking Buckaroo Espresso Rub
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp lemon juice
- 1 tbsp honey
- ¼ cup Rollicking Buckaroo Pepper Jam (Medium or Hot)
- 1 tsp cumin
- 1 tsp smoked paprika
- ½ tsp cinnamon
- ½ tsp garlic powder
Instructions
Marinate the Lamb
Rub lamb chops with olive oil, Espresso Rub, salt, and black pepper. Let sit at room temperature for 30 minutes or refrigerate overnight for deeper flavor.
Prepare the Glaze
In a saucepan over low heat, whisk together Rollicking Buckaroo Pepper Jam, honey, lemon juice, cumin, paprika, cinnamon, and garlic powder.
Simmer for 2 minutes until smooth and slightly thickened.
Grill the Lamb
Heat a grill or cast-iron pan over medium-high heat.
Grill chops for about 3-4 minutes per side for medium-rare, brushing with the pepper jam glaze during the last 2 minutes.
