
Spicy Buckaroo Chicken Skewers

🍢 Sweet & Spicy Buckaroo Chicken Skewers

Perfect For: Family reunions, BBQs, and backyard parties
Ingredients:
2 lbs boneless, skinless chicken breasts, cut into 1.5” cubes
1 red bell pepper, chopped into large chunks
1 orange bell pepper, chopped into large chunks
1 zucchini, sliced into thick rounds
1 red onion, cut into wedges
1 cup pineapple chunks (fresh or canned, drained)
¾ cup Rollicking Buckaroo Pepper Jam (any heat level you love)
2 tbsp olive oil
1 tbsp soy sauce
1 tbsp lime juice
½ tsp garlic powder
Salt and pepper, to taste
Wooden or metal skewers (soaked if wooden)
Instructions:
Make the Marinade:
In a medium bowl, whisk together Rollicking Buckaroo Pepper Jam, olive oil, soy sauce, lime juice, garlic powder, and a pinch of salt and pepper.
Marinate the Chicken:
Add chicken cubes to a large zip-top bag or bowl and pour in half of the marinade. Reserve the other half for basting. Marinate in the fridge for at least 1 hour (or up to 8 hours).
Build the Skewers:
Thread chicken, bell peppers, zucchini, onion, and pineapple alternately onto skewers.
Grill:
Heat grill to medium-high. Lightly oil the grates and grill skewers for 12–15 minutes, turning every few minutes and basting with the reserved marinade. Cook until chicken is fully cooked and lightly charred.
Serve:
Garnish with fresh cilantro and lime wedges. Serve over rice, with potato salad, or just pass them around on a platter!
