Spicy Adobo Lime Glazed Chicken with Roasted Veggies

Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 2 tbsp Rollicking Buckaroo Adobo Lime Rub
  • 1 tbsp olive oil
  • 1 tbsp lime juice

For the Pepper Jam Glaze:

  • 2 tbsp honey

  • 1 tsp apple cider vinegar
  • ½ tsp garlic powder

For the Roasted Veggies:

  • 1 zucchini, sliced

  • 1 small red onion, sliced
  • 1 cup cherry tomatoes
  • 1 tbsp olive oil

Instructions:

  1. Prep the Chicken:

    • Pat the chicken dry and rub evenly with Adobo Lime Rub, olive oil, and lime juice.
    • Let marinate for at least 30 minutes (or overnight for deeper flavor).
  2. Prepare the Glaze:

    • In a small saucepan, combine Rollicking Buckaroo Pepper Jam, honey, soy sauce, apple cider vinegar, and garlic powder.
    • Heat over low, stirring, until smooth and slightly thickened (about 3 minutes). Remove from heat.
