🧁 Rollicking Rainbow Veggie & Cream Cheese Pinwheels

Here’s a kid-friendly, colorful recipe using Rollicking Buckaroo Pepper Jam that’s fun, simple, and full of flavor — without being too spicy. Great for lunches, snacks, or even party platters!  With a Sweet Pepper Jam Swirl

🌈 What You’ll Need:

  • 4 large spinach or whole wheat tortillas
  • 1 (8 oz) block cream cheese, softened
  • ¼ cup Rollicking Buckaroo Pepper Jam (Mild)
  • 1 cup shredded carrots
  • 1 cup thinly sliced purple cabbage
  • 1 red bell pepper, finely diced
  • 1 yellow bell pepper, finely diced
  • 1 cup baby spinach or lettuce

👩🍳 Directions:

Mix the Spread:
In a bowl, mix softened cream cheese with pepper jam until smooth and slightly pinkish-orange.

Spread It:
Lay out each tortilla and evenly spread the cream cheese mixture all the way to the edges.

Layer the Veggies:
Sprinkle carrots, cabbage, bell peppers, and spinach over the tortillas in colorful rows.

Roll & Chill:
Roll each tortilla up tightly like a log. Wrap in plastic and chill for 15–30 minutes for cleaner slicing.

Slice & Serve:
Slice each roll into 1" pinwheels. Serve with extra jam for dipping if desired!
