
Rollicking Avocado Toast Brunch Bowl with Spicy Jam Drizzle

Ingredients:
1 thick slice of sourdough, toasted
½ ripe avocado, mashed
2 poached eggs
4 slices of crispy bacon (or tempeh bacon for vegans)
1 cup fresh greens (arugula, spinach, microgreens)
2 tsp Rollicking Buckaroo Pepper Jam (any heat level)
1 tsp lime juice
1 tbsp olive oil
Pinch of chili flakes and flaky sea salt
Instructions:
Toast & Spread: Smash avocado with lime juice, salt, and chili flakes. Spread generously over your toasted sourdough.
Poach Eggs: Poach two eggs until the whites are set but yolks are runny. Place on top of the avocado toast.
Jam Drizzle: Whisk the pepper jam with a splash of olive oil to make a drizzle. Drizzle over eggs and greens.
Plate It: Serve with crispy bacon, fresh greens on the side, and a mimosa or iced matcha for brunch vibes.
