Pepper Jam Glazed Tilapia


1 cup mango nectar

1/4 cup Rollicking Buckaroo Pepper Jam

2 tsp grated lime peel

2 T fresh squeezed lime juice

2 T honey

2 tsp peeled and minced fresh ginger

1 tsp ground cumin

1/4 tsp ground cinnamon

1 large jalapeno pepper, seeded and minced

salt and pepper

2 pounds tilapia filets, rinsed and patted dry.


Prepare grill or broiler.

Combine first 9 ingredients and a pinch of salt in a small saucepan, bring to a boil and stir until the jam has melted. Reduce heat and let simmer 18 minutes or until thick, stirring often.

Sprinkle fish with salt and pepper and place on a grill rack or broiler pan coated with cooking spray, skin side up. Cook for 5 minutes. Turn the fish, coat with the glaze and cook for 4 more minutes or until fish flakes. Serve with extra sauce and enjoy!
