🧄 Ingredients
For the Kugelis:
10 medium potatoes, peeled and finely grated
1 large onion, grated
4 large eggs
1 cup whole milk, warmed
6 oz thick-cut bacon, diced
3 Tbsp butter
1 tsp Rollicking Buckaroo Seasoning Blend (Smoky Southwest or Savory Trail works beautifully)
Salt and pepper to taste
For the Pepper Jam Glaze:
3 Tbsp Rollicking Buckaroo Pepper Jam (Medium or Hot depending on preference)
1 Tbsp apple cider vinegar
1 tsp Dijon mustard
1 Tbsp butter

Preheat oven to 375°F (190°C). Butter a 9x13 inch baking dish.
In a skillet, cook the diced bacon until crisp. Add butter and grated onion; sauté until golden.
In a large bowl, mix grated potatoes, eggs, warm milk, bacon-onion mixture, and Rollicking Buckaroo Seasoning Blend. Season generously with salt and pepper.
Pour mixture into the prepared dish and bake 55–60 minutes, until top is deeply golden and edges are crisp.
Prepare the glaze: in a small pan, melt butter with Rollicking Buckaroo Pepper Jam, vinegar, and mustard. Simmer 2–3 minutes until smooth and glossy.
Brush the hot Kugelis with the glaze right before serving. Let rest 10 minutes before slicing.
