Ingredients
For the Seitan
12–14 oz seitan, sliced into strips or bite-size pieces
1½ tbsp olive oil
2 tsp Rollicking Buckaroo Kickin’ Chicken Seasoning
1 tbsp tamari or soy sauce (gluten-free if needed)
1 tsp maple syrup or agave
½ tsp smoked paprika (optional, for extra depth)
Vegetables

1 green bell pepper, sliced
½ large yellow onion, sliced
2 cloves garlic, minced
Optional Sauce Boost (Highly Recommended)
2 tbsp vegetable broth
1 tsp rice vinegar or fresh lime juice
To Serve
Steamed jasmine or basmati rice
Sesame seeds
Sliced green onions
Red pepper flakes (optional)
Instructions
Season the Seitan
In a bowl, toss seitan with tamari, maple syrup, smoked paprika, and Kickin’ Chicken Seasoning until evenly coated.
Sear for Texture
Heat olive oil in a large skillet over medium-high heat. Add seitan in a single layer and cook 3–4 minutes per side until deeply golden and slightly crispy. Remove from pan and set aside.
Sauté the Veggies
In the same skillet, add onions and peppers. Cook 4–5 minutes until tender with a little char. Add garlic and cook 30 seconds until fragrant.
Bring It Together
Return seitan to the pan. Add vegetable broth and rice vinegar/lime juice. Toss everything together and cook 1–2 minutes until glossy and well coated.
Finish & Serve
Spoon over hot rice. Garnish with green onions, sesame seeds, and a pinch of red pepper flakes if desired.
