Kickin’ Chicken Hearty Winter Soup

Ingredients
1 lb chicken thighs or breasts, diced
1 tbsp olive oil
1 medium onion, diced
3 carrots, sliced
2 celery stalks, sliced
3 cloves garlic, minced
1½–2 tbsp Rollicking Buckaroo Kickin’ Chicken Seasoning Blend
1 tsp smoked paprika (optional, for extra warmth)
1 cup diced potatoes or cooked rice (your choice)
6 cups chicken broth
1 cup frozen corn or green beans
Salt & pepper to taste
Fresh parsley or thyme for garnish (optional)
Instructions
Sauté the base:
Heat olive oil in a large soup pot over medium heat. Add onion, carrots, and celery. Cook 5–6 minutes until softened and fragrant.
Build the flavor:
Stir in garlic and Kickin’ Chicken Seasoning Blend. Cook for 30 seconds to bloom the spices.
Add the chicken:
Add diced chicken and cook until lightly browned on the outside (about 4–5 minutes).
Simmer:
Pour in chicken broth and add potatoes or rice. Bring to a gentle boil, then reduce to a simmer. Cook 20 minutes, or until chicken is tender and potatoes are cooked through.
Finish strong:
Stir in frozen vegetables and simmer another 5 minutes. Taste and adjust seasoning.
Serve hot:
Ladle into bowls, garnish with herbs, and serve with crusty bread or warm biscuits.
