1. Mediterranean Kickin’ Roasted Red Pepper Spread
Using Rollicking Buckaroo Kickin’ Chicken
Ingredients:

2 large red bell peppers, roasted, peeled, and seeded

1 cup cooked chickpeas (or canned, drained)

2 tbsp extra virgin olive oil

1 tbsp lemon juice

1 tsp Rollicking Buckaroo Kickin’ Chicken seasoning

1 small garlic clove, minced

Salt to taste
Instructions:

Add roasted peppers, chickpeas, olive oil, lemon juice, Kickin’ Chicken seasoning, garlic, and salt to a food processor.

Blend until smooth.

Chill 30 minutes before serving with pita or fresh veggies.

2. Creamy White Bean & Garlic Dip
Using Bristol Bay Seasoning
Ingredients:

1 can (15 oz) cannellini beans, drained and rinsed

2 tbsp tahini

2 tbsp lemon juice

2 tbsp extra virgin olive oil

1 tsp Bristol Bay Seasoning

1 small garlic clove, roasted or raw

Salt to taste
Instructions:

Place beans, tahini, lemon juice, olive oil, Bristol Bay Seasoning, garlic, and salt in a food processor.

Blend until silky smooth.

Garnish with olive oil drizzle and chopped parsley.

3. Smoky Chipotle Tomato & Eggplant Spread
Using Applewood Chipotle Rub
Ingredients:

1 medium eggplant, roasted until soft

1 cup roasted cherry tomatoes

2 tbsp olive oil

1 tsp Applewood Chipotle Rub

1 tbsp red wine vinegar1 garlic clove, minced

Salt to taste
Instructions:

Scoop eggplant flesh into a blender with roasted tomatoes, olive oil, Applewood Chipotle Rub, vinegar, garlic, and salt.

Blend until smooth but slightly textured.

Serve warm or at room temperature with grilled flatbread.

4. Lemon-Herb Hummus
Using Smoky Citrus Salt
Ingredients:

1 can (15 oz) chickpeas, drained and rinsed

3 tbsp tahini

3 tbsp lemon juice

2 tbsp olive oil

1 tsp Smoky Citrus Salt

1 small garlic clove, minced

2–3 tbsp cold water (to adjust texture)
Instructions:

Add chickpeas, tahini, lemon juice, olive oil, Smoky Citrus Salt, and garlic to a food processor.

Blend, adding cold water as needed for creaminess.

Sprinkle extra Smoky Citrus Salt on top before serving.
