Bristol Bay Flounder with Mango Avocado Salsa
Serves: 4
Ingredients
4 flounder fillets
2 tablespoons olive oil
1 to 2 teaspoons Rollicking Buckaroo Bristol Bay Seasoning
1 lime
1 ripe mango, diced
1 avocado, diced
1/4 cup red bell pepper, finely diced
1/4 cup cucumber, diced
2 tablespoons red onion, finely diced
2 tablespoons chopped cilantro
Salt and pepper to taste
Directions
Pat the flounder dry and place on a plate or tray.
Drizzle with olive oil and season both sides with Bristol Bay Seasoning. Squeeze half the lime over the fish.
In a bowl, combine mango, avocado, red bell pepper, cucumber, red onion, cilantro, and the juice from the remaining half of the lime. Add a small pinch of salt and gently toss.
Heat a skillet over medium heat with a little olive oil.
Cook the flounder for 2 to 3 minutes per side, depending on thickness, until flaky and lightly golden.
Plate the flounder and spoon the mango avocado salsa over the top.
Serve with
Rice, roasted potatoes, or a simple green salad.
