Apple Pepper Jam Muffins
Makes: 12 muffins

Ingredients:
For the muffins:
2 cups all-purpose flour
1/2 cup granulated sugar
1/4 cup brown sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
2 large eggs
1/2 cup vegetable oil
1/2 cup buttermilk (or milk + 1 tsp vinegar)
1 tsp vanilla extract
1 cup finely chopped apples (peeled)
1/2 cup Rollicking Buckaroo Pepper Jam
Optional streusel topping:
1/3 cup brown sugar
1/4 cup flour
1/2 tsp cinnamon
2 tbsp butter, cold and cubed
Instructions:
Preheat oven to 375°F (190°C). Line a 12-cup muffin tin or grease it well.
In a large bowl, whisk together flour, sugars, baking powder, baking soda, salt, cinnamon, and nutmeg.
In another bowl, beat eggs, oil, buttermilk, and vanilla until well combined.
Stir wet ingredients into the dry ingredients until just combined (do not overmix).
Gently fold in chopped apples and Rollicking Buckaroo Pepper Jam to swirl throughout the batter.
Divide the batter evenly into muffin cups.
For the optional streusel, mix all topping ingredients until crumbly, then sprinkle over muffins.
Bake for 20–22 minutes or until a toothpick inserted comes out clean.
Let cool for 5 minutes in the pan, then transfer to a wire rack. Serve warm or at room temperature.
