Adobo Lime Chicken Skewers

Bright, smoky, and zesty—these skewers scream summer.

Ingredients

1.5 lbs. boneless skinless chicken thighs or breasts, cut into 1.5-inch cubes

2 tablespoons Rollicking Buckaroo Adobo Lime Rub

2 tablespoons olive oil

2 tablespoons lime juice (fresh is best!)

1 red bell pepper, cut into chunks

1 yellow bell pepper, cut into chunks

1 red onion, cut into wedges

1 zucchini, sliced into thick rounds

Lime wedges and chopped cilantro for garnish

Skewers (wooden skewers soaked in water for 30 minutes or metal skewers)

Instructions

Marinate: In a large bowl, toss chicken cubes with olive oil, lime juice, and Adobo Lime Rub. Let it marinate for at least 30 minutes (or up to 2 hours in the fridge).

Assemble Skewers: Thread the marinated chicken, bell peppers, onion, and zucchini onto skewers in an alternating pattern.

Grill: Preheat your grill (or grill pan) to medium-high heat. Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through and has nice grill marks.

Serve: Garnish with fresh cilantro and serve with lime wedges for extra zing.

Pro Tip: These are fantastic served with corn on the cob, grilled pineapple, or a cold beer.
