Adobo Lime Cauliflower Tacos with Avocado
Ingredients
1 medium head cauliflower, cut into small florets
2 tablespoons olive oil
1 to 1 1/2 tablespoons Rollicking Buckaroo Adobo Lime Rub
8 small corn or flour tortillas
1 avocado, sliced
1 cup pico de gallo
1/2 cup corn kernels
1/4 cup chopped cilantro
1 lime, cut into wedges
Optional lime crema
1/3 cup vegan sour cream or vegan mayo
1 tablespoon lime juice
Pinch of salt
Directions
Heat oven to 425°F.
Toss the cauliflower with olive oil and Adobo Lime Rub until well coated.
Spread on a baking sheet and roast for 25 to 30 minutes, turning once, until tender and browned around the edges.
If using the lime crema, stir together vegan sour cream or mayo, lime juice, and a pinch of salt.
Warm the tortillas in a dry skillet or directly over a burner for a few seconds per side.
Fill each tortilla with roasted cauliflower.
Top with avocado slices, pico de gallo, corn, cilantro, and a drizzle of lime crema.
Finish with a squeeze of fresh lime.
Serving idea
Serve with black beans, cilantro rice, or tortilla chips for a colorful meal.
