🍲 Ukrainian-Style Pepper Jam Varenyky (Pierogi) with Caramelized Onion & Pepper Jam Drizzle

Why this works:
Varenyky (pierogi) are one of Ukraine’s most loved family dishes, served during gatherings, holidays, and Sunday dinners. Traditionally filled with potatoes, sauerkraut, mushrooms, or cheese, this version introduces a sweet-and-spicy twist using Rollicking Buckaroo Pepper Jam to elevate the flavor without straying from authenticity.


Ingredients:

For the dough:

3 cups all-purpose flour

1 egg

1 cup warm water

1 tsp salt

2 tbsp sunflower oil

For the filling:

3 large potatoes, peeled & boiled

1 cup farmer’s cheese (or ricotta)

1 tbsp butter

3 tbsp Rollicking Buckaroo Pepper Jam (Medium works beautifully)

Salt & black pepper, to taste

For topping:

2 large onions, thinly sliced

3 tbsp butter

1 tbsp Rollicking Buckaroo Pepper Jam

Fresh dill, chopped

Instructions:

Make the dough – In a large bowl, mix flour, salt, egg, water, and oil. Knead until smooth. Cover and let rest for 30 minutes.

Prepare the filling – Mash boiled potatoes with butter. Stir in cheese, pepper jam, salt, and pepper until creamy.

Form the varenyky – Roll out dough thinly, cut circles (about 3 inches). Place a spoonful of filling in each, fold over, and pinch edges tight.

Cook – Boil in salted water until they float (about 5–6 minutes). Remove gently with a slotted spoon.

Caramelize onions – In a skillet, melt butter and cook onions low and slow until golden. Stir in 1 tbsp pepper jam for a glossy finish.

Serve – Top varenyky with caramelized onions, fresh dill, and an extra drizzle of Rollicking Buckaroo Pepper Jam for a sweet-spicy kick.
