🌽 Creamy Jalapeño Street Corn (Elote-Style, Easy Heat)

Serves
4–6 as a side or appetizer
Ingredients
6 ears fresh corn (or 4 cups corn kernels)
3 tbsp butter, melted
½ cup sour cream or Mexican crema
¼ cup mayonnaise
½ tsp garlic powder
1½–2 tsp Jalapeño Seasoning Salt (to taste)
Juice of ½ lime
½ cup crumbled cotija or feta cheese
Fresh cilantro, chopped
Optional: smoked paprika or chili flakes for extra warmth
Instructions
Cook the corn
Grill corn until lightly charred, or boil until tender.
Let cool slightly, then cut kernels off the cob if desired.
Make the creamy sauce
In a bowl, whisk together sour cream, mayo, melted butter, garlic powder, lime juice, and Jalapeño Seasoning Salt.
Combine & coat
Toss warm corn with the sauce until well coated.
Finish & serve
Sprinkle with cheese, cilantro, and a light dusting of additional Jalapeño Seasoning Salt if you want a little more heat.
