
🧀 Grilled Pepper Jam & Veggie Quesadilla Wedges

🛒 Ingredients:
4 large flour tortillas
1 cup shredded Monterey Jack or vegan cheese
½ red bell pepper, thinly sliced
½ yellow bell pepper, thinly sliced
½ zucchini, thinly sliced
¼ red onion, thinly sliced
¼ cup Rollicking Buckaroo Pepper Jam (Mild or Medium)
Olive oil, for brushing
Optional toppings: sour cream, guacamole, lime wedges, chopped cilantro
👨🍳 Directions:
Prep the grill to medium-high.
Brush tortillas lightly with olive oil on one side. Lay 2 tortillas oil-side down.
Layer fillings on each: cheese, veggies, and a generous drizzle of pepper jam. Top with remaining tortillas, oil-side up.
Grill quesadillas 2–3 minutes per side until golden and crispy.
Slice into wedges, garnish, and serve on a colorful platter!
