๐ฟ Ingredients:
4 boneless, skinless chicken thighs
2 tbsp Rollicking Buckaroo Pepper Jam
1 tbsp Rollicking Buckaroo Adobo Lime Rub
2 tbsp coconut milk
1 tbsp soy sauce or tamari
1 tbsp lime juice
1 tsp grated ginger
2 cloves garlic, minced
1 tsp sesame oil
1 tbsp honey or agave syrup (optional)
Fresh cilantro & lime wedges for garnish
๐ฅ Instructions:
Marinate the Chicken โ In a bowl, whisk together pepper jam, Adobo Lime Rub, coconut milk, soy sauce, lime juice, ginger, garlic, sesame oil, and honey. Coat the chicken and let it marinate for at least 30 minutes (or overnight for deeper flavor).
Grill or Pan-Sear โ Heat a grill or pan over medium-high heat. Cook the chicken for 5-6 minutes per side until golden, caramelized, and cooked through.
Glaze & Serve โ Brush with extra Rollicking Buckaroo Pepper Jam in the last minute of cooking for a sticky, flavorful finish.
Garnish & Enjoy โ Top with fresh cilantro and serve with steamed jasmine rice, grilled veggies, or a Thai-style salad.
