🔥 Thai-Style Sweet & Spicy Chicken Noodles (Serves 6-8)

🥢 Ingredients:

2 lbs. chicken thighs or breasts, sliced thin

1 lb. rice noodles (or any preferred noodle)

3 tbsp Rollicking Buckaroo Pepper Jam (for sweet heat)

2 tbsp Adobo Lime Rub (for smoky citrus depth)

3 tbsp soy sauce

1 tbsp fish sauce (optional, for authentic Thai flavor)

2 tbsp lime juice

1 tbsp sesame oil

2 tbsp vegetable oil

3 cloves garlic, minced

1-inch ginger, grated

2 cups mixed bell peppers & carrots, thinly sliced

½ cup green onions, chopped

¼ cup cilantro, chopped

¼ cup crushed peanuts (for garnish)


👨🍳 Instructions:

Cook the noodles according to package instructions. Drain and toss with sesame oil to prevent sticking.

Marinate the chicken with Adobo Lime Rub and 1 tbsp soy sauce for at least 15 minutes.

Heat vegetable oil in a large pan over medium-high heat. Sauté garlic & ginger until fragrant.

Add chicken and cook until golden and cooked through. Remove and set aside.

In the same pan, stir-fry bell peppers & carrots for 2-3 minutes.

Make the sauce: Mix Rollicking Buckaroo Pepper Jam, soy sauce, fish sauce, and lime juice in a small bowl. Pour into the pan.

Toss noodles & chicken back into the pan, coating everything in the sauce.

Garnish with green onions, cilantro, and crushed peanuts. Serve hot!
