🔥 Spicy Adobo Lime Vegan Meatballs

Ingredients:

  • 1 can (15 oz) chickpeas, drained and mashed
  • ½ cup walnuts, finely chopped
  • ½ cup breadcrumbs (or oat flour for gluten-free)
  • 2 tbsp ground flaxseeds + 5 tbsp water (flax egg)
  • 2 tbsp Rollicking Buckaroo Pepper Jam (any flavor)
  • 1 tbsp Adobo Lime Rub
  • 1 tsp smoked paprika
  • 1 tbsp soy sauce or coconut aminos
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tbsp olive oil (for cooking)

Instructions:

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a small bowl, mix ground flaxseeds and water; let sit for 5 minutes to form a flax egg.
