Ingredients (Serves 4–6)
8 oz raclette cheese (or fontina if unavailable), sliced
4 oz aged white cheddar, cubed
2–3 tbsp Rollicking Buckaroo Pepper Jam
1 small clove garlic, finely grated
Fresh thyme (or rosemary), minced
Fresh cracked black pepper
Warm accompaniments for dipping:
Crusty bread chunks
baby potatoes
Apple slices or pear wedges
Cornichons or pickled onions
Instructions
Preheat oven to 400°F
Lightly oil a small cast-iron skillet. Scatter cheddar evenly across the bottom.
Layer raclette slices on top, overlapping slightly.
Dot the surface with Rollicking Buckaroo Pepper Jam—don’t spread it, let it melt naturally.
Sprinkle with garlic, thyme, and black pepper.
Bake 10–12 minutes, until cheese is fully melted and bubbling at the edges.
Switch to broil for 30–60 seconds to lightly blister the top (watch closely).
Serve immediately—straight from the skillet.
