
🍂 Rollicking Buckaroo Roasted Pumpkin & Sweet Potato Bites

Ingredients
2 cups pumpkin, peeled and cubed
2 cups sweet potato, peeled and cubed
2 tbsp olive oil
1 ½ tsp Rollicking Buckaroo Seasoning Blend (smoky + savory works beautifully)
½ tsp cinnamon
1 tbsp maple syrup
Pinch of sea salt
Optional Garnish: Toasted pepitas, dried cranberries, or crumbled feta for a salty kick.
Instructions
Preheat oven to 400°F (200°C).
In a large bowl, toss pumpkin and sweet potato cubes with olive oil, Rollicking Buckaroo Seasoning Blend, cinnamon, and salt.
Spread evenly on a parchment-lined baking sheet.
Roast for 25–30 minutes, stirring halfway through, until golden and tender.
Drizzle with maple syrup just before serving.
Garnish with pepitas, cranberries, or feta for extra crunch and flavor.
