(Sweet & Spicy Puerto Rican Chicken)

🛒 Ingredients:

2 lbs bone-in chicken thighs or drumsticks

2 tbsp olive oil

1 medium yellow onion, diced

3 cloves garlic, minced

½ cup Rollicking Buckaroo Pepper Jam (any heat level you prefer)

¼ cup tomato sauce

2 tbsp apple cider vinegar or white vinegar

1 tsp ground cumin

1 tsp smoked paprika

½ tsp dried oregano

Salt and pepper to taste

¼ cup chopped cilantro (for garnish)

Lime wedges (for serving)

🍳 Directions:

Season the Chicken:
Pat chicken dry and season with salt, pepper, and a sprinkle of oregano.

Sear for Flavor:
In a large skillet, heat olive oil over medium-high heat. Add chicken pieces and sear until golden brown on both sides. Remove and set aside.

Build the Base:
In the same skillet, add diced onion and cook until translucent. Stir in minced garlic and sauté for 30 seconds.

Create the Sauce:
Add Rollicking Buckaroo Pepper Jam, tomato sauce, vinegar, cumin, paprika, and a pinch of salt. Stir and simmer 3–4 minutes, allowing the flavors to meld.

Simmer the Chicken:
Return the chicken to the pan, coat in sauce, cover, and simmer on low for 25–30 minutes until the chicken is tender and fully cooked.

Finish & Serve:
Garnish with chopped cilantro and serve with white rice, tostones (fried plantains), or mofongo for a truly Puerto Rican experience.

🌶️ Chef’s Tip:

For a smoky island twist, finish the chicken on the grill for 2–3 minutes after simmering — that caramelized glaze from the Rollicking Buckaroo Pepper Jam becomes pure magic.
