🌮 Adobo Lime Grilled Shrimp Tacos

Zesty shrimp, smoky spice, and fresh toppings wrapped in a warm tortilla.

Ingredients:

1½ lbs. large shrimp, peeled & deveined

1 Tbsp Rollicking Buckaroo Adobo Lime Rub

2 Tbsp olive oil

2 Tbsp fresh lime juice

8 small corn or flour tortillas

1 cup shredded cabbage or slaw mix

½ cup diced mango or pineapple (optional)

¼ cup chopped cilantro

1 avocado, sliced

Lime wedges, for serving

Instructions:

Marinate the Shrimp: In a bowl, combine shrimp, Adobo Lime Rub, olive oil, and lime juice. Toss to coat and let sit for 15–30 minutes.

Grill: Skewer shrimp or use a grill basket. Grill over medium-high heat for 2–3 minutes per side until pink and slightly charred.

Assemble Tacos: Warm tortillas. Fill each with shrimp, cabbage, fruit (if using), avocado slices, and cilantro.

Serve: Squeeze fresh lime over the top and enjoy!

Want to turn up the flavor even more? Add a drizzle of chipotle crema or your favorite hot sauce.
