Same Plant, Different Fire: Why Habanero Peppers Don’t All Have the Same Heat

Have you ever picked two habanero peppers from the very same plant, tasted them, and wondered how one could be pleasantly hot while the other felt like it was trying to set your mouth on fire?
That’s one of the fascinating things about habanero peppers: even peppers growing side by side on the same plant can develop noticeably different levels of heat.
At Rollicking Buckaroo, understanding that natural variation is part of creating the right balance of flavor and heat in every batch of our Pepper Jam.
Same Plant. Different Heat.
Habaneros are famous for their fruity flavor and serious kick, typically ranging from roughly 100,000 to 350,000 Scoville Heat Units. But that doesn’t mean every pepper on a plant reaches exactly the same heat level.
A number of things can influence how much capsaicin—the compound responsible for a pepper’s heat—a particular pepper develops.
Sunlight can make a difference. One pepper may be hanging in direct sunlight while another is protected beneath a canopy of leaves.
Water and growing conditions matter too. Temperature, moisture, soil conditions, and periods of plant stress can all influence how peppers develop.
Ripeness also plays a role. Habaneros change as they mature, developing not only their beautiful color and fruity flavor but also their individual heat character.
Even the position of the pepper on the plant can create slightly different growing conditions.
So while two habaneros may come from the same roots, the same soil, and the same plant, they don’t necessarily arrive in our kitchen with exactly the same personality.
What About the Seeds?
Here’s where pepper folklore gets interesting.
People often say, “Take the seeds out if you don’t want it so hot.”
That works—but not quite for the reason most people think.
The seeds themselves are not the main source of capsaicin. The greatest concentration is found in the pale inner tissue surrounding the seeds, sometimes called the placenta or pith.
Because the seeds sit directly against that hot tissue, capsaicin coats their surface. So when the seeds and surrounding membrane stay in the pepper, you usually get considerably more heat.
Remove that inner membrane and the seeds attached to it, and the pepper can taste dramatically milder.
And the Stem?
The green stem isn't where the habanero stores most of its heat, which is why stems are normally removed before peppers go into our Pepper Jam.
The real heat control happens inside the fruit.
That means when we're working with habaneros, we're paying attention to the pepper flesh, inner membrane, seeds attached to that membrane, maturity of the peppers, and the amount of habanero used in each recipe.
