Smoky Citrus Salsa Verde-Style Spread

Yield: 1 gallon

Ingredients

6 lbs roasted tomatillos or green tomatoes

1 lb toasted pepitas (hulled pumpkin seeds)

½ cup fresh garlic (roasted or sautéed)

2 cups olive oil

¾ cup Rollicking Buckaroo Smoky Citrus Salt

¼ cup white vinegar or lime juice (optional for acidity)

Instructions

Blend all ingredients to desired texture.

Keeps well for 3–5 days.

Serve with crostini, chips, or fresh-cut produce.
